Breakfast is the most important meal of the day, but let’s be honest my hungry Unicorns…who actually has time to eat it. This breakfast egg bake is quick, easy, and versatile, making breakfast a breeze. Not to mention, who doesn't love to sleep in a few extra minutes!
Mix and match your ingredients to make different versions veggie, meat lovers, or combine the two for maximum flavor and deliciousness. Make the bake Sunday night and enjoy it the rest of the week for a no stress breakfast!
Remember, like a unicorn every meal is different and colorful, so feel free to add any of your favorite veggies!
Ingredients
1 Whole Sweet Potato Peeled
1 Red Bell Pepper
1 Zucchini
6 Eggs
½ White Onion
2 Tablespoons of Olive Oil
Make it Meaty:
Add Sausage, Bacon or any other meat of your choice
Prep time: Ten minutes, Oven time 20 minutes
For a total of 30 minutes
Directions:
Preheat the oven to 350 degrees. Grease an 8 inch pyrex dish with one tablespoon of olive oil or cooking spray. Set the pyrex dish aside and crack 6 eggs into a bowl, mixed until scrambled.
Next, chop the sweet potatoes, zucchini, onion, and bell pepper into bite size pieces. Heat a frying pan to a medium flame and add the other tablespoon of olive oil. Once the veggies have softened take them out and add them to the egg mixture you created.
Remember, the veggies will cook in the oven so if the sweet potatoes aren’t quite done, that's okay!
Next step, assembly time. Take the cooked veggies and add them to the bowl of eggs, mixing the two together.
Next, pour the egg and veggie mix into the greased pyrex dish. During this step you can arrange the veggies how you like. Don't forget to add the breakfast meats! (Already Cooked).
Once the mixture is in the pyrex dish, place it in a pre-heated oven for 15-20min until the egg is cooked through fully, and a nice golden brown on the top.
Let the egg bake cool and cover it for a week of breakfast goodness or serve right away.
Some of my favorite add ons include: salsa, guacamole or hot sauce. You can also add it to a piece of toast or tortilla for a quick breakfast burrito. The possibilities are endless!

Reheating instructions:
Cut the desired amount of egg bake you desire. Pop in the microwave for 45 seconds to 1 min. Add your favorite toppings or eat as is, and enjoy!
